Recipe

Here is a recipe we tried for the first time this weekend, and the whole family loved it. Even Jimbo who isn't a fan of tomatoes really enjoyed it, and it was super simple, so I know we will be having it again!

Bruschetta Chicken Bake

1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup Shredded Mozzarella Cheese

HEAT oven to 400
MIX tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.
LAYER chicken, basil and cheese in 3-qt. casserole or 13x9-inch baking dish.
TOP with stuffing. Bake 30 min. or until chicken is done.

**sigh** while that sounds rather yummy........I would find a way to mess it up!! hahaha. Poor Poor sevy. Lucky me he doesnt complain :-)

yummo - success was had at our house tonight! In fact, since I knew we didn't need the whole 9x13, I made it in two pans and froze the 2nd...nothing like 1 round of work and 2 dinners - LOVE IT!!! thanks for the great inspiration!
